Quintessence is equipped with a MASH footswitch, which by default is assigned to bridge harmonized notes to the next interval in the scale. In TonePrint mode, you can assign MASH to control every aspect of the pedal, including custom scale steps. If you don't want to use one of the seven commonly used preset mood modes, you can use the Custom Scale mode to load any of the timbres you want your harmonies to sound like.
